I have tried and fallen in love with her cakes – I can promise you won’t be disappointed. She made me the most delicious lemon cake that I have ever had. My kids loved it too… and they are definite chocolate cake addicts so I thought lemon cake would not be their idea of heaven …but I was so wrong!

Mercado Medieval – Estepona May 2010

What a wonderful evening we spent at the Mercado Medieval in Estepona port last weekend.

Last year it was held in the old town but this they changed it the port and it was excellent.

Stalls of olives, and Art, as well as sweets, nuts and drinks, jewellery and even a Barbeque were there to entice the money from our pockets.

The stall holders played their parts brilliantly dressing up for the event and getting into the theme of things, creating a realistic and fun-filled atmosphere.

The kids love the Medieval playa area with authentic games of the period – stilts, tin walking, puzzles, bow and arrows, and even donkey rides for those kids who were brave enough. The favourite was a hand swung carousel which sent our little ones flying around and around to the sounds of their high pitched squeals of delight.

Not sure how candy floss fits in the Medieval theme but the kids certainly loved it!

Looking forward to next year already.

Hello Kitty - a purrfect choice!

Ever since Christmas if you mentioned to my daughter about her birthday she immediately said that she wants a ‘Hello Kitty’ cake!

So her request was my command. I had chosen a picture for the cake topper but my newly turned 3 year old had other ideas.

She looked through the pictures and decided on another. I was resigned to use this on cupcakes instead, lol. Very demanding these 3 year olds!

These chocolate cupcakes are actually are vegan recipe, egg and milk free, for my friends daughter who is allergic, however all the kids enjoyed them and it meant that she wasn’t left out of the cakey celebrations.

My daughter was thrilled with the cake – big, pink and very definitely very Hello Kitty!

Not sure what to do this Saturday? Then head to the The Trading Post at the Estepona Riding School (exit Km 159 at the carreterra at Laguna Village and follow the signs inland for approx 5 mins).

It is on every Saturday and starts at 11.00 am. They have loads of stalls – toys, books, clothes. fruit & veg, Nigel's fab sauces and many more. Make sure you visit The Cake Company's stand to try one of their amazing cupcakes or tray bakes – Divine!

Stay for a while and enjoy the music, have a drink at the bar or a spot of lunch at the BBQ, while enjoy the Saturday Eventing. The kids can even go on a pony ride! Entrance is free so you have not excuse – go and have some family fun!

Haiti Fundraiser – Talk Radio

Haiti: We Must Help and We Must Help Now

Talk Radio Europe in association with Estepona Golf will be having a tournament for Haiti on Friday 5th of February.

A gala evening will be held at the magnificent La Quinta Golf. The cost for the dinner and show is only 50 Euros per person, starring Stan Boardman and Kenny Lynch. Among many of the entertainers will be tenor Stephen Lloyds-Morgan, Mel Williams, the Marbella Big Band and the WOW Factor 2009 winner Christian Fa and runner-up Rebecca Tate.

Estepona Golf have given the use of the golf course free so that 100% of money raised will go to the Ark Christian Fellowship who have direct access to the orphanages in Haiti through Child Care Ministries.

One of our recommended cake makers stepped in at the last minute to make 24 cupcakes for the show in San Roque at the weekend! Lou from Costa Cake Design was an absolute star and made and delivered these wonderful cupcakes for me to bring to the Christmas Fayre!

Ok so you have the wonderful cupcakes with fabulous toppers but where do you put them? On a beautiful cake stand of course. One of my clients last week had looked everywhere for one but had no joy finding something that looked fabulous so she gave me a call.

Luckily I was able to put her in touch with the wonderful Jonty (aka Richard Lewis from Richard Lewis Interiors) and he supplied the most beautiful silver cupcake stand! The cupcakes looked even better displayed on it. He has various different styles so are spoilt for choice.

He has the most amazing pieces in his boutique in Guadalmina Alta. Believe me you may go in for a cake stand but you will leave with much more. He has the most wonderful wall paper – to die for, I think I have gone a bit wall paper crazy after seeing his range! And he has also just received his Christmas decorations which are just beautiful.

A Batty Idea.

Sam is a huge Batman fan so his mum knew exactly what type of cake he would love! She called me up and I set about creating something to make him smile! He told everyone in school including the teachers that he was getting a Batman cake for his party so I knew I had to do a good job!

The Icing on The Cake Spain is interviewed for Estepona Radio again! lol but this time I brought my mum along too.

Yes, once again again the lovely presenter, Rona Burke, for Estepona Radio has interviewed me about my thoughts, likes and dislikes about Estepona! I was interviewed earlier in the year too so me must have liked me to invite me back again! We chatted about Estepona and various aspects of living in Spain. She is a lovely chatting person who puts you immediately at ease. She asked me to bring my Mum along too so she could hear her experiences of moving over to Spain.

Rona also loves my cake toppers and mentions them on a regular basis on her show! I have had many a client telling me that is how they heard about us!

Three Vanilla Cupcakes.

Makes 20 regular cupcakes / 350 degree oven

3/4 cup (1-1/2 stick) unsalted butter, room temperature
1-2/3 cups vanilla sugar
2 large eggs, room temperature
2-2/3 cups flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup + 2 tablespoons milk
1 teaspoon vanilla extract
1/2 vanilla bean, seeds scraped out

1. Beat butter until softened. Add sugar and beat until light and fluffy, about 3 minutes.

2. Add eggs, one at a time, beating until well combined.

3. Measure the flour, baking powder, and salt into a medium bowl and whisk to combine.

4. Measure out the milk and vanilla and stir to combine.

5. Add about a third of the dry ingredients to the butter/sugar and beat to combine. Add about a half of the milk/vanilla and beat to combine. Continue adding, alternating between dry and wet and finishing with the dry.

6. Scoop batter into cupcake cups about 2/3’s full. Turn oven down to 350 degrees and bake cupcakes for about 22-25 minutes or until a cake tester comes out clean.

Vanilla Bean Frosting

2 sticks (1 cup) unsalted butter, room temperature
1 package (8 ounces) philly cream cheese
2 teaspoons vanilla extract
1/4 vanilla bean, seeds scraped out
-4-5 cups powdered sugar
1. Using an electric mixer, beat the butter at medium speed until creamy.
2. Add the cream cheese and beat until combined.
3. Add the vanilla extract, vanilla seeds, and 3 cups of powdered sugar and beat at low speed, occasionally stopping to scrape the sides and bottom of the bowl, until light and fluffy. Add more powdered sugar to arrive at the consistency and sweetness you like.

Assemble

1. Frost each cooled cupcake with a healthy mound of frosting.
2. Top with vanilla seat salt or whatever you so desire.

You should actually save the vanilla beans you scrape the beans out of and also use those to make vanilla sugar or reuse in some way as there is likely a lot of life left in them. Reminded by this post…

Don’t worry if you can’t ice – we have edible icing sheets that you just pop on top of the cake – soooo easy!

Don’t know what these cake topper things are – neither did we! But now we love them and so do our kids! They know they can always get the cake they want, so they are happy and at very little cost – we are happy.

We print their favourite character on a thin sheet of icing – all totally edible! You just put it on your cake and add the candles –hey presto! Try them, you’ll love them - the proof is in the pudding!!
